Cheese and Potato Wafers



1-1/2 cups butter or margarine, softened                                                                                     3/4 cup (3 oz.) sharp cheddar cheese, shredded                                                                            2 eggs                                                                                                                                              1 tsp. dried thyme leaves, crushed                                                                                               1/4 tsp. medium ground pepper                                                                                                     1/8 tsp. cayenne pepper                                                                                                                 1-1/2 cups 6 oz. all-purpose flour                                                                                                3/4 cup (4 oz. ) dehydrated potato flour                                                                                      Poppy seeds or sesame seeds

 1. Mix butter and cheese in mixer bowl. Add eggs, thyme and peppers; mix well. Add flours and mix until blended.

2. Roll into 3 or 4 logs. Roll logs in poppy seeds or sesame seeds. Refrigerate 1 hour or until firm enough to slice. Slice 1/4-inch thick. Place on sheet pan, 1 inch apart.

3. Bake at 375 ºF about 12 minutes or until lightly browned. Serve 2 wafers, warm or cold.
